Oh man! did I tell y'all we finally caved and got an instant pot. We debated for a while if we wanted to get one or not. We had an electric pressure cooker from HSN a few years ago and really didn't use it. Then we burnt it on the oven so that was that. It sat - and sat - and finally sat in the garbage.

Living in the rural south means not having access to delivery, fast food or even a decent grocery store within a quick driving distance. Sure we have a dollar general, but meat and produce - nope. I'm a spoonie mom (more on that another time) which means I have bad days, and I particularly do not do well in the mornings. I am constantly forgetting to take out the meat. I have good intentions each time I meal plan, really I do. I just suck at follow through there. We were constantly reaching for the boxed - canned - and otherwise processed quick foods. This did wonders for my body! (catch that sarcasm?) I mean, were not calling it the bamabound 20 for nothin! I have finally had enough gluten and processed food caused flare ups. I have enough to worry about. So with that said - insert the instant pot!

This glorious glorious machine is my favorite obsession right now! I have made some amazing meals and since I know a few of my friends here are also wanting to eat a bit better, why not keep sharing my recipes!

This is the first one I remembered to take photos of. So without further adaue - ( is that how it is spelled?)

 

Egg Roll in a Bowl - Keto and Gluten friendly!

Ingredients

  • 1 lb ground beef or any ground beef of choice ( sausage, chicken )

  • 1 bag pre-shredded cole slaw mix found in the produce section near the bagged salads

  • 1/2 cup bone broth ( I got mine at whole foods, or if your lucky Walmart)

  • 1 tbsp tamari or gluten free soy sauce of choice

  • 1 tbsp garlic powder or to taste

  • 1 tbsp of onion powder or to taste

  • 1/2 tsp pepper or to taste

  • 1/ tsp salt or to taste

 

Here is what I did:

First turn the instant pot on and press saute mode.

Next I added the meat and sauted it just like I would do in the skillet (another favorite part of the instant pot - less dishes)

Once browned I turned saute off and add in the spices and bone broth , give it a stir and then add in the cabbage and carrots. ( I used my dicer )

Once you put the cabbage and carrots in - DO NOT MIX it. Just close the lid to you pot and manually set it to 1! YES I said 1. It takes a bit or it to come to pressure and I found that one minute at pressure was the perfect amount! It was not too mushy but not raw either. It was a hit and everyone loved it and it is now on the list of GO TO meals! If your not eating Keto or Paleo, go ahead and put on top of rice like I did for the kids but I ate mine just like this. It was divine and the leftovers heated up well!

Here are some happy kids and then let me know if you tried it!

 

Instructions

  1. Place Instant Pot on saute. Wait until it's hot and then add beef(or meat of choice).

  2. Add seasonings and soy sauce to brown meat. ( up to you if you want to drain the fat or not. Use discernment with your diet plan

  3. When meat is browned, turn Instant Pot off and add the 1/2 cup bone broth. Add bag of cole slaw mix on top and DO NOT stir. Place lid on and turn knob to sealing position.

  4. Set Instant Pot on manual high pressure for 1 minute. If you have a newer model Instant Pot, you select the pressure cook button instead for 1 minute.

  5. When timer is up, preform a quick release. When pressure is released, open carefully and give everything a quick stir.

  6. Spoon into bowls and enjoy!
