I thought it would be fun to start showcasing some of my favorite food finds from here in Alabama. Things that I didn't have back in Nevada and things I would probably miss if I ever left.
So first off is this Birmingham made marinade called Dale's Seasoning. This stuff is so savory ya'll and it goes on literally everything. Basically dale’s is a marinade. It is used primarily as a cooking sauce before and during cooking. All meats, veggies and anything else you'd like to have that umami savor flavor. The recipes are endless, so you know you will be seeing more of those in this blog. (oh ya, it is 100% gluten free and there is even a low sodium option!)
First though, we're going to start with a classic dinner we like to make when were in a hurry or "oops" forgot to plan dinner kind of mood.
Ingredients: Dale's Seasoning Sausage of choice (we like local dean's mild)
3-4 Zucchini
Red Potatoes
Queso Fresco
Olive Oil
That's it - simple ingredients that most you already have at home.
Ok so we start with the potatoes. Dice as usual and add to a skillet with a bit of olive oil so it doesn't stick to the pan. Get these baby's sauteing and cooking. Then just before the potatoes brown, add in your sausage as that usually doesn't take as long to cook. Saute both till they are about 3 min from done. Add in the dale's (about 2-3 tbsp) and saute for one minute. finally add in the zucchini. You want to make sure you are not over cooking your zucchini. No one wants a mushy Zuch and really, we need those precious nutrients right! While I am waiting for it to be ready I like to grind some queso fresco and sprinkle just before serving! It really is that easy and from start to finish takes me about 20 min tops!
The whole family loves it and the kids eat alll the veg so we call this a WIN. Trust me, you will want to try this baby out. Find a store near you here to get yourself some dale's!
