Low Carb - Keto Friendly What?
The truth is we really do try to eat low carb. I want to say we have even tried to maintain ketogenic macros but then I would be lying. Now don't get me wrong, we totally tried to do it as a family, but it was something that we ultimately decided was just not 100% for us. What we do know though is how much better we all feel eating low-ish carb. So while we don't follow the LCHF (low carb - high fat) diet, we still try to eat as low carb as possible.
I want to also touch on the topic of budget here, eating low carb is definitely more costly than the typical American diet of Pasta, Bread, and processed crap. That itself is a topic for another blog and maybe another person. What we are really here for is that I want to share my favorite round up of recipes that I have actually cooked and fed my family. If have made adjustments I will note those, as we are family with food allergies and is a MUST when we cook. Enjoy!
1. Beef and Broccoli - by life made keto
Tom is a broccoli fan, and like most kids they avoid it all costs, but with enough flavor I can get them to eat the green trees. This is an easy low carb Chinese takeout favorite perfect for busy weeknights. Best of all, instructions to make this classic Chinese dish in the pressure cooker and slow cooker. This recipe I found on Lifemadeketo.com and substituted the soy for Tamari and opted not to use the ginger. We also used time to thicken instead of your usual thickeners. It says you can serve it with cauliflower rice, but we just ate it out of the bowl like this!
2. Buttery Ranch Pork Chops - by eating on a dime
If you would have told me a few years ago that I would be not only eating a pork chop, but cooking and craving them I would have to say you were crazy. I am picky meat eater, I don't venture out of my comfort zone often and I was pretty afraid of pork chops. Well, we have a local meat market here in Alabama and I they run these specials but you have to buy the set. Included was 2 lbs of pork chops. It sat in my freezer for like two weeks until I was brave enough to give em a try. Thank goodness I had the instant pot. They were a huge hit and the kids said it "tastes like chicken". Note, we used bone in cuts, but other than that we followed the recipe exact. It was a budget winner we now have in our arsenal! Give it a go, you won't be sorry.
3. Garlic Butter Chicken - by the keto summit
A few months back I did this online Keto Summit thing that was free and super overwhelming. It was when we were really trying to make the keto diet work for the whole family. Although we decided to not go full keto, I took away some amazing recipes and valuable tips. This recipe here is so easy and so savory, you could change it up to your own liking by adding in custom spices too. This one calls for Ghee instead of butter, but ya, that is not even close to being in our budget. We used regular butter here and paired it with good old zoodles! YUM.
4. Cheesy Broccoli Soup - by life is sweeter by design
Enough with the broccoli already right. But this is one of those soups that I am in love and obsessed with. When we lived in Nevada I used to get it pre done at the Safeway deli. It was amazing. Fun Fact, there is not a Safeway anywhere near the state of Alabama! Welp, I needed some and luckily I found Jamie and her recipe on pinterest. Man pinterest is addicting. Anyhow, you can leave out the carrots to make it really super duper Keto, but it is otherwise pretty scrumptious and low carb. With fall coming up, this is going to be a favorite!
5. Italian err Mississippi Pot Roast - by thirty hand made days
Ok, I have been making this one for years in my slow cooker. I found it when I used to frequent the baby center forums. I think we called it pepperocini beef. But I have since seen it with many names like Italian Beef, Mississippi Pot Roast, Beef Crack etc... But when you are fairly new to the Instant Pot world I needed a recipe and thirty hand made days was the answer. Note the photo has toasted evil french bread, mmm that evil bread is good with this beef in the middle. Just sayin'. Ok, you if you know me you have probably had a meal or two with this at my house, if you don't then give it a go and WOW all your people. (yes, the kids too)
